Greek Salad Recipe

greeksaladrecipeCelebrate National Salad month with our chef approved and delicious greek salad recipe!  Eating salads during mealtime are a great way to add fresh vegetables to your daily diet. Vegetables in salads contain great sources of fiber which will keep your digestive tract healthy. This month, focus on your health and add a large portion of salad to your next meal.

1 head romaine lettuce-rinsed, dried and chopped

4 large plum tomatoes, seeded and chopped

1/2 cucumber, seeded and chopped

1/2 red onion peeled and thinly sliced

1 bell pepper, seeded, chopped

1/4 cup whole, Kalamata olives

1 cup of low-fat feta cheese cubed



7   tbsp olive oil

2   tbsp lemon juice

1   tsp chopped garlic

1   tsp fresh chopped oregano

1/2  teaspoon fresh dill

Pinch of salt

Pinch of black pepper



Mix olive oil, lemon juice, garlic, vinegar, oregano, and dill weed together until blended. Add salt and pepper and set aside.  In a large bowl, combine tomatoes, cucumber, onion, bell pepper, olives, and feta cheese.  Add dressing, toss and serve!
