The Green Burrito

greenburritospinachwrapsmSpring is on its way this week, and thoughts of green are popping up everywhere! (Not to mention, tomorrow is St. Patrick’s Day). So as you are enjoying the green bagels and corned beef and cabbage (or maybe not), why not change it up with another green-inspired creation: the green burrito! A healthy twist on a Mexican classic, this recipe serves up spring in a fun, delicious way.

6 oz. grilled chicken strips
Two strips of turkey bacon
¼ cup low-fat shredded mozzarella cheese
¼ tsp. garlic (chopped or granulated powder)
1 tsp. olive oil
2 lettuce
4 slices of tomato
1 spinach wrap



Mix garlic with butter to make garlic butter to taste, and spread it evenly on one side of spinach wrap. Layer with cooked turkey bacon, chicken and mozzarella. Add lettuce and tomato and roll up wrap. Wrap in foil and place in oven just long enough to melt the cheese. Serve and enjoy your burrito!
