The Mean, Green (and Yummy!) Smoothie

greensmoothieI love the kids we serve! Those little faces are what start my day off right. Knowing how I get to educate them about healthy eating also motivates me to travel all around and get them all excited about nutrition. Did you know that k-2 grade kiddos need just as much fuel to get them through their busy day as a middle schooler? The long school day keeps their little bodies running all day. So it matters more than ever to offer a variety of fruit and vegetable choices at meals and snack time. This small step is the difference between “unleaded” fuel and “premium”—let’s keep them focused, healthy and strong! 


For example, when I visit any of my little friends, I always come prepared with a nutritious, energy-boosting smoothie, salads and/or power “cookies”. They love when we experiment with flavors such as spinach, fruit and yogurt smoothies, which are so easy to do at home. Here is a recipe for one of my favorites: Mean Green Tropical Strawberry Banana Smoothie. Make this for your kids as an afternoon snack and it will keep them fueled to tackle that homework assignment! 


Mean Green Tropical Strawberry Banana Smoothie

Yields 12 - 4 oz portions


2 cups baby Spinach Leaves, packed

1.5 cup frozen strawberries

1.5 cups banana (1.5 medium bananas)

1 cup pineapple, diced or crushed

1 cup apple sauce

1 cup orange juice

1 cup vanilla yogurt

1 Tbsp vanilla extract


Mix all ingredients in a blender or a food processor. Blend well and serve VERY COLD!


Not just for the kids – you can enjoy this very healthy smoothie to boost your energy level and keep you healthy and strong, too!
