GettyImages 486527367Did you know that pears are members of the rose family and are related to the apple? Depending upon the variety, their paper thin skins can either be yellow, green, brown, red or a combination of two or more of these colors. Make sure not to peel the skin off, as that‘s where the most nutrients are found. For a unique way to incorporate pears into your diet (or your holiday fare!), check out our delicious recipe below!

 

Asian Pear Salad

INGREDIENTS

  • 2 celery sticks
  • 2 firm pears, cut into 1/4-inch-thick matchsticks
  • ½ small green cabbage shredded
  • 1/4 cup fresh cilantro leaves
  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 scallions, sliced thin
  • 1/2 teaspoon finely chopped fresh hot red chili

 

DIRECTIONS

Chop celery, and pears into 1/4-inch-thick sticks. Add thinly sliced scallions and set aside. In a bowl, mix together lime juice, rice vinegar, ginger and stir in celery, pears, cilantro, and chili. Flavor mix with salt and chili pepper. Let stand at room temperature 15 minutes before serving.
