Tomato Ginger Vinaigrette

sundriedtomatoesVinaigrettes are a great way to add flavor to salads while providing more health benefits than cream-based dressings. Enjoy the spring sunshine and fresh vegetables by introducing your family to this healthy vinaigrette. Don’t forget to add lean protein such as grilled chicken or turkey, or a handful of mixed nuts, to turn your salad into a nutritious meal.

 

 

 

Ingredients

2 tbsp. sun dried tomato, oil packed, minced

2 tsp. finely minced ginger

2 tsp. orange zest

1 tsp. Dijon mustard

1 tsp. tomato paste

½ tsp. salt

¼ tsp. black pepper

4 tbsp. cider vinegar

2 tbsp. orange juice

¾ cup extra virgin olive oil

 

Directions

 

1. In a small bowl, whisk together the sun dried tomato, ginger, orange zest, Dijon mustard, tomato paste, vinegar, orange juice, salt and pepper.

2. Slowly whisk in the oil until the dressing is creamy and blended. Adjust seasoning to taste.

3. Drizzle on top of your favorite salad blend, and enjoy!
