Chef’s Corner: Crispy Cast Iron Chicken Thighs Three Ways

Simple, efficient, and designed for busy weeknights, this Chicken Thigh Dinner System shows how one flavorful protein can transform into three completely different meals. Starting with crispy, juicy cast iron chicken thighs, this meal prep approach creates endless possibilities without the stress of cooking from scratch every night. From a fresh Greek-inspired chicken bowl to savory chicken fried rice and cheesy salsa verde quesadillas, each meal is packed with flavor while saving time throughout the week. Perfect for resetting your routine, this cook-once, eat-three-times system makes homemade dinners easier, more flexible, and more enjoyable.
Recipe: Crispy Cast Iron Chicken Thighs
Ingredients:
- Chicken thighs
- Olive oil
- Kosher salt
- Black pepper
- Garlic powder
- Paprika
Directions:
- Pat chicken thighs dry, season generously with olive oil, Kosher salt, fresh ground pepper, and paprika.
- Heat a cast iron skillet over medium-high heat.
- Sear smooth side down for 5-6 minutes until browned. Flip and cook for 2 minutes.
- Transfer to a 425°F oven for 8-12 minutes.
- Cook until internal temperature reaches 175-185. Rest before slicing.
- Serve throughout the week by incorporating it into meals, such as a Greek-inspired bowl, fried rice, or a salsa verde quesadilla.
Meal 1 – Greek-Inspired Chicken Bowl
Ingredients:
- Cooked chicken thighs
- ¼ cup olive oil
- Juice of 2 lemons
- 4 garlic cloves, minced
- 1 tsp. oregano
- 1 tsp. paprika
- 1 tsp. kosher salt
- ½ tsp. black pepper
Toppings:
- Cucumbers
- Cherry Tomatoes
- Red Onion Kalamata Olives
- Feta Cheese
- Tzatziki
- Pita
Lemon Dill Rice:
- 1 cup jasmine or basmati rice
- 2 cups broth or water
- Zest and juice of 1 lemon
- 1 tbsp. butter or olive oil
- 2 tbsp. fresh dill or parsley
Directions
- Cook rice and finish with lemon, herbs, and butter.
- Whisk together chicken flavoring ingredients.
- Toss chicken with the lemon-herb mixture.
- Reheat chicken to 165°F.
- Build bowls and serve.
Meal 2 – Chicken Fried Rice
Ingredients
- 3 cups cold cooked rice
- 1½ – 2 cups cooked chicken thighs
- 2 eggs, beaten
- 1 cup diced onions and carrots
- 3 scallions
- 3 cloves garlic
- 1 tbsp ginger (optional)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Olive oil
Optional Additions:
- Chili crisp
- Sriracha
Directions
- Heat olive oil in a large skillet or wok over medium-high heat. Scramble the eggs, then remove and set aside.
- Sauté the onions, carrots, garlic, and ginger (if using) until tender.
- Add the cooked chicken and cold rice, breaking up any clumps. Stir-fry for 3–4 minutes.
- Stir in the soy sauce, oyster sauce, and sesame oil. Fold in the scrambled eggs and scallions.
- Serve hot with chili crisp or sriracha, if desired.
Meal 3 – Salsa Verde Chicken Quesadilla
Ingredients
- 2 cups chopped chicken thighs
- ½ – ¾ cup salsa verde
- 2 cups shredded cheese of choice
- 8 flour tortillas
- ½ small red onion
- 1 jalapeno (optional)
- Olive Oil
Directions
- Toss chicken with salsa verde, lime juice, and black pepper.
- Layer cheese, chicken, onions, and jalapenos onto tortillas.
- Add more cheese and fold.
- Cook until golden brown on each side, serve with rice.

During his time at Whitsons, Tony has transitioned through many roles, currently serving as the Director of Culinary Innovation. Having grown up with a family in the restaurant business, he’s always been around food. After culinary school he ventured out on his own, and his love of sweets led him to the bakery business. After the bakery sold, he was contracted to run bakeries and delis in supermarkets on military bases across the northeast. In his current role, Tony’s most rewarding job is doing guest chef visits at schools.
