A Chickpea Bonanza

Chickpeas are a high-fiber food that contain minerals such as manganese, zinc, copper and magnesium, as well as B-vitamins, such as thiamine and vitamin B-6. A popular chickpea dish that people love is hummus. Not only is it delicious, it’s also good for you and easy to make! This well-known chickpea mixture has a deep-rooted ancient history from the Mediterranean and the Middle East. It’s a great heart healthy food that can be enjoyed as traditional hummus or in a variety of salads. Here’s another option for you to enjoy:
RECIPE: Chickpea Salad
INGREDIENTS:
15-oz. can chickpeas (or 1 ½ cups cooked)
¼ cup bell pepper, diced
¼ cup English cucumber, chopped
½ Tbsp. olive oil
½ Tbsp. red wine vinegar
½ tsp. kosher salt
½ tsp. smoked paprika
Fresh ground pepper
1 pinch celery seed or fresh herbs (parsley, dill, basil), optional
DIRECTIONS:
Drain and rinse the chickpeas. Dice the bell pepper and chop the cucumber. In a bowl, combine all ingredients until well mixed. Taste, add salt as desired, and enjoy!
