Can’t Beat Beets

When it comes to nutrient-dense root vegetables, you can’t beat beets! Its deep, rich color is full of natural antioxidants called betalains, which along with nitrates, reduce inflammation, improve heart health and give your body a boost of energy -making them a great snack or beverage choice before physical activity. Beetroot juice also is known to improve your skin and give you a glow. However you eat your beets, be sure to include them as part of the recommended rainbow of produce our bodies need to function optimally. Below is another salad option featuring beets that you can add to any meal as a healthy side (or main) dish.
RECIPE: Roasted Beet Salad
Yield: 4 servings
INGREDIENTS:
3 large beets, peeled and cubed
Olive oil
Salt and pepper to taste
¾ cup seedless cucumber, diced
¼ cup red onion, fine
Mixed greens
½ cup crumbled feta
Juice of 2 fresh squeezed lemons
DIRECTIONS:
Spread beets on a sheet pan, drizzle with olive oil and roast at 375 ° for about 40 minutes until tender. Combine beets, cucumber, red onion, feta, 1 ½ Tbsp. olive oil and lemon juice in large bowl. Serve on a bed of mixed greens. Enjoy!
