My Heart Beats for Beets

Love your heart this American Heart Month with some yummy beets! Not many people are aware of the many benefits of adding beets to your diet. They are good for your heart, improve blood and oxygen flow, reduce inflammation, improve digestive health, are good for your brain, have cancer fighting properties and more! Not sure how to incorporate beets into your diet? Here’s an easy side dish to cook up alongside dinner!

RECIPE: Harvest Beets

INGREDIENTS:
3 cups sliced raw beets or 2 cans (16 oz each) sliced beets
1/2 cup sugar
1 Tbsp. all-purpose flour
1/2 cup white vinegar
1/2 tsp. salt
2 Tbsp. butter

DIRECTIONS:
1. In a saucepan, place raw beets and enough water to cover. Cook until tender, about 15-20 minutes. Drain, reserving 1/4 cup liquid. (If using canned beets, drain and reserve 1/4 cup juice).

2. In a separate saucepan, combine sugar, flour, vinegar and reserved beet juice. Cook over low heat until thickened.

3. Stir in beets, salt and butter. Simmer for 10 minutes. Transfer to plate and enjoy!
