Sweet Potato – Such a Sweetie!

RECIPE: Sweet Potato Muffins
Ingredients:
1 1/3 cup all-purpose flour
2 cups whole wheat flour
2 teaspoons baking powder
2 teaspoons salt
4 eggs and 4 egg whites
4 cups sweet potato
1 1/3 cups sugar
4 cups low fat milk
1 cups vegetable oil
4 teaspoons cinnamon
2 teaspoons ground cloves
1 teaspoons nutmeg
2 cups raisins
Directions:
Preheat oven to 400 °. Spray muffin pans with cooking spray or line the cups with paper liners. Sift flour, baking powder, and salt into a large bowl. In another bowl, blend eggs, potato, and sugar. Add milk, oil, and spices; beat until smooth. Pour liquid mixture into dry ingredients. Mix just enough to blend. Stir in raisins. Divide the batter between muffin cups. As soon as muffins are in the oven, reduce heat to 350 degrees. Bake for 25 minutes or until a toothpick comes out dry.
